Although Amazon doesn't have them on their site, I bought the stainless set of this cookware. Amazon only seems to list the non-stick version of the Easy System cookware. I bought my set at Bed Bath & Beyond.Basically, these pots and pans are the Simply Calphalon type, with measuring lines, pour spouts, and lids with silicone seals. I did not want to buy a set of non-stick, and have to throw out certain pans in a few years because the non-stick finish was scratched, so I got the stainless finish.
My main concern was that the pans be induction-capable, and these are. I bought the set, cooked on my old electric coils for a couple of weeks, then, after the induction cooktop was delivered, had it installed just a few days ago. Thus, I can compare the pots' performance on two different systems.
I have been very pleased so far with the performance of the Calphalon pans. Induction cooking is very fast. Although Calphalon says in their instructions to heat your skillet first to the temperature you are going to cook at, and only then add your oil, this simply won't work on an induction cooktop. My cooktop instructions said never to heat an empty pan, for fear of over-heating. A call to Calphalon on this issue confirmed that you should always, for safety reasons, follow the advice provided by your induction manufacturer. So that little dilemma is solved.
On my induction cooktop tonight, I used the large skillet to sear a steak, and it was incredibly fast, with the lid on. You cannot turn your back on this skillet. Your steak will be done in no time, and the result will be uniformity and evenness in cooking, with a nice flavor.
Though my pans are stainless inside, I have not found them particularly difficult to clean. I was able to lift up some of the stuck-on food even with a silicone spatula. For more stubborn surface stains, a little Barkeeper's Friend does the job nicely.
The handles of these pots have silicone trim, which makes it easy to lift a lid without getting burned. The seals on the lids are made of silicone as well. One disadvantage of the silicone seals is that they pick up the odors of whatever you were cooking.
I know most people say never to buy a set of pans, and for the most part, I agree with them. However, BB&B had this cookware at a good price, and even offered a rebate with the purchase. I researched induction cookware for a long time, and I felt Calphalon would best fit my needs. In addition, I hang my pans from a pot rack, and the fact that everything would match was a major positive point for me. With the addition of my small Calphalon stainless roasting pan, my cookware looks very uniform and nice hanging from the rack.
This is indeed a set, and I have indeed used every pan in the set in only a short time, with the exception of the little stock pot. My next goal is to buy a cast-iron skillet from Le Creuset -I think it will be fun to compare its performance with the Calphalon.
All in all, this was a good choice for me.
