I've looked high and wide, and bought several pans for making dosas. All the pans were disasters for making dosas as I don't use non-stick pans.
Everyone has their own way of keeping a steel pan seasoned. It is a pan that will need your expertise in the seasoning techique, but you will be rewarded.I purchased this pan along with a Spring USA Blackline pot. The difference in quality and cratsmanship is huge. Compared to the Blackline, the Matfer is junk. The Blackline has a substantial handle, the Matfer a poorly made afterthought; the Matfer is thinner and doesn't heat evenly. Sorry this pan is junk. Buy the blackline. Or buy them both; I know which one you will return.
