After nearly a decade, my 5 quart saute pan needed to be replaced. After looking around, I picked this one because of it's mid-range price and reviews I've read of this line of pans.

As you would expect with a disc based pan, it heats quickly and evenly. I cook on a gas range and even heating is very important to me.

The lid fits nicely, it's not as highly domed as my last pan's lid was, so I do have to be a bit more careful about how much food I put in it. The handle on the lid is big enough to easily grasp it using a potholder.

The handle on the pan stays cool to the touch.

I love the shape and appearance of this pan, and how well it heats. Since this size pan is the most used pan in my kitchen, if I decide to pick up a second one, it will be another one of these. I use these a lot for quick stews, the wide base makes it easy to saute the meat, then add in the rest of the ingredients, cover and let it simmer until done.

Call it a mid life crisis. I found myself starting to look around for more excitement in the kitchen. I was getting tired of the same-old, same-old with the entry level unit I started housekeeping with. I can't wait to get home at night to see what we can cook up together!

A guy can always hope for the ultimate and if I had one critical thing to say about my new partner, it would be the lid seems a little loose fitting, but no deal breaker by any means. The advantage of the revealing tempered glass is that you can see what's going on inside it without ever having to guess. No more dramatic boil overs like the old days. "You're just supposed to know" is a thing of the past.

A little heat will go far with this unit, thanks to it's aluminum encapsulated base which keeps the heat uniform. If you've never used stainless cookware like this, about the biggest mistake you can make is to run too hot too quickly. Take the time to develop a "feel" for the pan, and you won't find yourself cursing in the morning, feeling inadequate and wishing for your old lifestyle back. The right kind of handles for when things get really hot helps keep you cooking without shifting positions and losing control. Morning after clean up is easy, just be sure to soak and scrub carefully to maintain the luster of your first encounter. Dried carefully with a towel, you'll know why you brought this beauty home to stay.

I pull this thing out for fancy home cooking for the last eight months, and I haven't had a single disappointment with it. I use bamboo and only hand knit cloths on it, it still looks new and shiny with only a few scuff marks on the bottom. I mostly use it for searing and deglazing, most of my pans are cast iron and you can't really put acidic things in cast iron or deglaze with good results. This heats up faster than my cast iron and my kitchen doesn't seem as hot when I'm done cooking, so I probably use less energy and should cook with it more. I'm impressed with it enough that when I have the money I'll be getting more Cuisinart stainless steel items to replace my little teflon sauce pans and dutch oven. I wish I had heard more about techniques with stainless steel and cast iron cooking when I was younger, now I feel like my ignorance confined me to a couple of decades of eating dog food.
