This pan truly cooks perfectly. It browns if you want but doesn't stick. It works with gas and electric. I left the burner on by mistake with soy sauce in the pan. It hardened but washed out instantly.

Non-stick works perfectly. Very solid well-built pan. We use it all time and the clean up is very easy. We especially like the heavy ergonomic curved handles.

I love these pans. Nothing sticks. Although I do use a bit of butter for flavor with my eggs and other foods provide their own fat. The eggs float in the pan. My old Teflon pans ... everything sticks. I am handwashing and immediately drying them (8, 10, 12 inch), just as I do with my knives, etc. Don't really have to but if I had taken better care of my calphalon pans I might not have purchase these great pans. Which would have been a shame. I do have to admit, fine German cookware made in China, is a little bit of a bother. Even knowing this I was very impressed by the quality and heft of the pans. The ceramic is smooth and free of defects. The pans all distribute heat evenly even on our mediocre stove. Worth the price. I would buy them again in a heartbeat. My only problem is storage. So now I will make a center island to fit under the ceiling rack I am to buy. Heck, why not get a new stove as well to go with the new pans.
