I was looking for a nice wedge shaped sectioned pan to make scones in and this one seemed to fit the need. When I received it, the first thing I noticed is that the sections are rather small. In the picture they looked to be a bit larger than they actually are. The second thing I did was look at the Use & Care instructions. Wow, kind of blown away by all of the maintenance. This is something you don't see until you receive the product. I have never owned any pan (cast iron or other material) that has suggested so much maintenance. I am going to provide the Use & Care instructions verbatim so you can decide if you want to go through all of this before you order this pan. In addition, food sticks to this pan and it is very difficult to clean. Next time I use it I will spray it with cooking spray first (which is something I didn't think I needed to do after the conditioning regimen). I actually followed the AFTER USE instructions after the first time I used the pan because it was slightly discolored due to having blueberries in the scones. I would imagine many different fruits and other food ingredients could do this as well. In addition, the last sentence in the BEFORE USING section suggests reconditioning each time it is washed with soap is recommended. Yikes! I would strongly suggest the Lodge Logic or Nordicware pans over this one.USE & CARE instructions:
BEFORE USING
Wash utensil thoroughly in detergent and water. Rinse and pat dry. Then "condition" the surface of our kitchenware with a thin coating of cooking oil or shortening. Leave it on low heat for half an hour. Wipe off the excel oil and repeat. Reconditioning each time it is washed with soap is recommended.
DURING COOKING
Preheat your utensil over medium heat for about 90 seconds before adding shortening or food.
AFTER USE
Always clean the utensil in warm soap water and dry thoroughly. Store in warm and dry place. If the food is discolored or has a metallic taste, these are the signs that the cast iron kitchenware is rusty and requires reseasoning by the following procedure:
1. Scrub thoroughly with scouring pad or steel wool
2. Wash with liquid household detergent and water
3. Dry thoroughly
4. Coat the inside of the utensil completely with unsalted shortening
5. Heat in moderate temperature oven for half an hour
6. While hot, remove the excess oil with paper towel or dry cloth. Let the utensil dry.
