This pan is somewhat bigger than I expected. The side walls spread out from the base a little more than it seems to look in the picture, but it's a fantastic pan. It's heavy and the base fits perfectly on the largest element of my electric stove. Looks great and fits in with the rest of the Tri-Ply line. The clear lid is great for watching the status of what's cooking without interrupting it. It's large enough to brown at least 3 pounds of ground beef with plenty of room to spare, so capacity should not be a concern at all. You could probably fry 4 medium size chicken breasts or maybe 5 pork chops at once without crowding the pan. I just got this pan, but I expect to use it quite a bit.

Great multi-purpose pan. I switched from Caphalon non-stick cookware to Caphalon's stainless steel after the non-stick surface became worn (which is really unsafe given the chemicals used for the non-stick coating). Anyways, it's a little bit of an adjustment going from non-stick to stainless steel. When you use non-stick, one becomes used to not having to use much oil and still not having a problem with food sticking to your cookware. With stainless steel, I think the trick is to pre-heat your stainless steel pan, cook at a little bit lower setting, and you'll figure out it's just as good as non-stick. My everyday Caphalon works great after I figured out how to use it...cleans easy too. After cooking, I just pour a little water in the pan and let it soak for 30 mins and anything stuck on the pan just comes right off. I also use Bar Keeper's friend cleanser and this stuff cleans it perfectly.

It is the one. It is the most amazing, most gorgeous pan i have ever encountered. It is build very solid, i never felt it was flimsy or breakable. It is nice and large but not so large that it heats unevenly on the burners. It is OVEN SAFEsear the steak, pop in oven, voila you made an awesome steak on a stove top! The ban is not non stick but if you work at the proper heat for the food, heat up the pan, then add your oil/butter and HEAT IT UP TOOthe ban is virtually non stick. I can make MOST items in this pan but there are a few items i do prefer to make in a nonstick panlike fry potatoes. For some reason i can not fry potatoes in this, they stick , i ssuspect because the oil gets starchy and in that case a non stick surface is needed.

Bar Keepers friend will keep this pan looking 100% new . It is dishwasher safebut dish washing detergents will make it dull but cleanso i usually clean in dishwasher then follow up with barkeepers friendvoila new pan!.

FYI: I read on another site that you should grease it with a thin coating of oil, in case anyone also read thatPLEASE NEVER DO THIS. Stainless steel is NOT cast iron. It will be gross .

Like another reviewer, I bought this pan to replace some of my non-stick Calphalon skillets. I love the 12-inch size (if you are debating between this and the 10-inch and have more than two people in your family, get this one) because it is big enough to cook large skillet meals or even double batches of some meals. Before I was using one of those family skillets with the high sides and the long handle, and this holds much, much more than that one did. Also, I like the short handles on this pan because I don't have to arrange all of the handles on the stove when I have multiple pans going. This is my first pan with a glass like, and it's nice to see the food cooking. I can tell the lid forms a good seal with the pan because food cooks very quickly with the lid closed. There is a learning curve with stainless steel, and I've burned a few things in this pan, but I think low heat and lots of cooking oil/fat are they keys to using it. It washes up pretty well, too. I bought a couple of tri-ply pieces and a couple of other pans with the encapsulated base, and now I wish I had splurged and bought all tri-ply because it heats up much faster and cooks more evenly. The $80 price on Amazon seems to be the full price everywhere, and I was able to find this pan at my local Bed, Bath & Beyond and use a 20% off coupon...so shop around and save yourself a little money!

I ordered this pan for my daughter. I visited her after it arrived, so I got a chance to try it out myself. I'm really glad other reviewers emphasized that you should preheat the pan. This is the first tri-ply pan I've used, so I would not have known that it's so important (the paperwork included in the box does address this). The cooking surface of the pan did "dis-color", but it performed beautifully. I cooked a bunch while I was visiting and used the pan nearly every day for many types of meals. It worked well and cleaned up easily. I even tried making pancakes with it. I've only ever made pancakes with a well seasoned cast iron pan at home, so I was hesitant to try the Calphalon, but it was fine. You must remove any bits of previous pancakes before putting more batter in, but you can cook even pancakes without much butter, and they came up off the pan with no trouble. I'm certainly not a professional chef, so there might be some aspect of the pan that isn't perfect, but I thought it was great. (Design It seemed strange at first, but I ended up really liking that it has two handles instead of one long one, particularly in a small kitchen. The two handles take up less stove space than a long handle would, and you have more control with two handles. Because the pan is large, the lid is obviously also large, and I had a bit of difficulty in the small kitchen figuring out where to put the lid when it wasn't on the pan a minor inconvenience and a function of the small kitchen, not a fault of the pan. And I really like being able to see through the lid, but I worry about the potential of its breaking. It seems pretty tough, so I guess just be careful with it.)
